Soft & Chewy Protein Chocolate Chip Cookies

About 20–24 cookies · 350°F · 11–13 min

Ingredients

Wet ingredients

  • 1 cup butter (softened or melted and cooled)
  • ¾ cup golden brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract

Dry ingredients

  • 1½ cups bread flour
  • 1 cup whey protein powder
  • 2 cups rolled oats
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix butter and brown sugar together until well combined.
  3. Add eggs and vanilla. Mix until smooth.
  4. In a separate bowl, combine bread flour, whey protein, rolled oats, baking soda and salt.
  5. Gradually add dry ingredients to wet ingredients. Mix gently until a thick cookie dough forms.
  6. Fold in chocolate chips.
  7. Refrigerate dough for at least 1 hour to firm up.
  8. Scoop into large balls and flatten slightly into thick cookie shapes.
  9. Bake for 11–13 minutes, until edges are set and centres still look slightly soft.
  10. Allow cookies to cool on the baking sheet for 10 minutes before transferring to a cooling rack.

Secrets to soft & chewy cookies

  • Use brown sugar for moisture and chewiness.
  • Bread flour gives the cookies a satisfying chewy texture.
  • Avoid overmixing once the flour is added.
  • Don’t overbake! Slightly underdone centres will firm up as they cool.
  • Store in an airtight container to maintain softness.

Nutrition notes

These are still cookies, made with butter, brown sugar and chocolate. What the whey protein and oats do is make each one more filling than a standard cookie, which is why they work well as a snack.

Whey comes from milk, so these aren’t suitable for anyone avoiding dairy.
